Planting Sweet Potatoes
Ever since I learned that sweet potato greens are edible I've had them in all my gardens. They're real troopers, they can over-winter and come back, spread prolifically underground and make for a large amount of calorie crop yield. And while the leaves are somewhat bitter and have to be eating sparingly, I'd always include them in salads and stir-fries if in an smaller proportion to other greens. They provide a great edible living mulch and help other plants get established. If you need to cut them back to make space for other plants, they're easy to manage.
