Sweet And Sour Rice Wine Home Brew Yeast Fermentation Taste Test With Hand Ground Organic Brown Rice


This is my process of using a stainless steel ladle and funnel to collect a taste test of my second batch of rice wine. My first batch was made with whole organic short grain brown rice. I wanted to try that once before taking it to the next level of using a grain grinder to crush the rice grains before fermentation. My intuition was correct, the fermentation was much more thorough in the second batch using the ground rice. The yeast has been able to have more to eat with the increased surface area of the ground rice. It's been about a month of slow brewing cold to warm temperatures. This has been a good time of year to test the process. After doing the taste test I discovered that it has a very sour flavor. I'm fine with that as I'll be able to balance it out with a bit of liquid stevia. So it appears that my experimental method of making home brew honey wine will be a sweet and sour experience.
